Homemade Blueberry Pancakes Recipe

Hi, Lovely Readers!
Some days can be a struggle and other days I wake up and seize the day. Today I wanted to make something different for our children for breakfast. I usually search on Pinterest for ideas. I found a really easy recipe that I wanted to share with you all.
I made homemade blueberry pancakes with maple syrup & cut up berries on the side for breakfast.
I substituted the one egg for one overripe banana I had frozen. This was the first time I tried this recipe, and it was a hit!
The recipe I used is below.

Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
1 1/4 cups whole milk (or any milk)
1 egg (or substitute with 1 overripe banana)
3 tablespoons unsalted butter melted
1 tsp vanilla extract (optional)
Instructions
Melt the 3 tablespoons of butter in microwave for 30 seconds, set aside. I suggest mixing it.
In a medium bowl, mix together flour, sugar, salt, and baking powder.
Stir milk and egg together. (Or stir in the banana after you mash it separately in a bowl.)
Create a well in the center of the flour mixture.
Pour the butter, vanilla, and milk mixture into the well.
Use a wire whisk to stir everything together until just combined. It will be slightly thick and lumpy, but should be well incorporated. Add fresh blueberries and lightly stir with whisk or spatula.
Allow the batter to rest while heating a lightly oiled skillet or griddle to medium high heat. Note: I like to use stick butter instead.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Note: I like to use my soup ladle to get big sizes.
Cook each side for 3-6 minutes, until lightly golden brown. Enjoy!
We like to add maple syrup on top & berries cut up on the side.
